What's better than an awesome, mouth watering slab of tender, juicy meat slow-cooked to perfection? If you know anyone who is in the barbeque business, you know that smoking meats is basically an art form. You have to be patient and disciplined. It takes times -- in fact, it takes many long hours in a smoker to achieve a tender portion of meat.
And that's how Laura's BBQ has succeeded with their smoked BBQ meats. Smoking is what tenderizes the meats. Smoked meats properly done end up falling off the bone, and that's how we like them! Flavor and tenderness takes a bit of skill to achieve so that mouth watering meal makes you come back looking for more. We do cooking the old-fashioned way over a fire that's watched carefully overnight and a slow burn. An important part of the barbeque process is management of the fire. Cooking meats too fast or too hot won't achieve your desired result. When tenderness and delicious flavor is your goal, it's got to be done right. For example, a brisket could take anywhere from 8 hours or more to become tender so the flavors permeate the meat. But that's our job at Laura's BBQ.
