Had an occasion to sample Laura's BBQ after a couple of hours of kayaking.  Their BBQ was on point as was the gentleman serving us - he even had the right accent (from outside of Fort Worth, Texas).  . . . he was patient, courteous, and never flustered. He even brought food to people at their tables and helped with chairs.  I had the pulled pork sandwich and took the side of slaw and put it on my sandwich (which might be sacrilege in some parts of the country). The result had a hint of sweet and smoke, and was 

just about perfect.

 Laura's BBQ Shack is reinventing the backyard BBQ party scene. I attended a backyard BBQ here in Brooklyn and thought it was a GENIUS idea what they had a food truck parked out front. Laura's BBQ catered all the meats and fixins - melt in your mouth pulled pork, brisket, ribs, smoked chicken, smoked salmon, and since that obviously wasn't enough for the 50+ people, and ENTIRE pig.  I opted for the pulled pork, ribs, and brisket and smothered it in their BBQ sauce. The pulled pork made the perfect sandwich, the ribs fell off the bone,
